Running Sushi, also known as "Kaiten-Sushi" in Japanese, has been circulating in the culinary world for over five decades. The first restaurant with this serving technique opened in Osaka in 1958, and since then, the sushi express continuously runs on a circular conveyor belt, loaded with various delicacies at a speed of eight cm/s. In the mid-90s, Running Sushi bars opened in Europe, and the rotating plates of sushi are rightly called Japanese fast food.
In Kaiten-Sushi restaurants in Japan, diners usually have a maximum of 30 minutes to eat 16 sushi (eight plates), with an extra ten minutes if they manage to eat more.
